I typically pass on bolognese at restaurants because I can make a decent version at home. But chef Jassi Bindra puts a thoughtful twist on the comforting dish by simmering ground lamb in a tomato base warmed by spices like cinnamon and cardamom. The perfumed sauce isn’t overwhelming. It helps cut through the meat’s richness while complementing the al-dente pasta.
